Mike D's NFL Conference Championship Breakfast Burritos

I had trouble deciding where to watch the games this weekend, finally decided on staying home, cooking good food, and having total control over the TV. There are advantages and disadvantages to being a displaced fan, especially when you're on the West Coast. The best part is that games start much earlier out here. I've grown to love 10am start times during the regular season. Back east if you want to get anything done on a Sunday you have to do it before the games. In the PST you can watch your game and still have the rest of the day for typical food shopping, laundry, etc. This weekends noon start time for the New England Patriots game provides an interesting challenge for me. It's too early for some Crock Pot cookery so I think I'm gonna make it a brunch. Here's my own recipe for killer breakfast burritos that I will be making for the AFC Championship:

6 Eggs - scrambled, with a little milk in there. Use a the biggest pan you've got, once they are cooked turn your heat down to low.

Hash Browns - in another skillet brown up some hash browns (5 mins per side) in a little bit of oil. Once they are cooked chop them up and add them to the big pan with the eggs.

Turkey Bacon - (or real bacon if that's how you roll) I cook it in the same pan as the hash browns to save dish washing, again once cooked, chop the bacon up and add to the big pan.

Salsa - take a tub of salsa, I love the Trader Joes stuff, and dump it in to the big pan. Stir it up.

Cilantro - chop up about two tablespoons of fresh cilantro and dump that in.

Shredded Cheddar Cheese - add about a cup to the big pan, I usually use more than that but I don't want to come off like a fatso.

Once you've got all that in the big pan, stir and simmer on low for a few minutes so all the flavors can properly meld. Also add some salt and pepper to taste. The amount you use for the ingredients can vary depending on how many people you've got feed. The good thing is that if you've got leftovers they will keep for a couple days.

Tortillas - it's important to make sure you get tortillas that aren't too big but can also won't fall apart. Heat them up over an open stove flame to make them more easy to wrap up. Add a generous scoop from the big pan, and construct your burrito. The method my wife taught me is to put the scoop in the middle of the tortilla then fold the bottom up first before your roll them. Leave one end open, this prevents leakage.

Experiment with different salsas, bacon and hasbrowns and find your favorite combination.  They are the perfect football watching food and go great with Bloody Marys!
